Electric Pressure Canning Pinto Beans

    I did it!! I am so excited!  I got an electric canner about a year and a half ago but have been afraid to give it a try. After lots of reading and watching youtube videos, I did it! What made it a little less terrifying was my Nesco. Super simple to use, and took some of the fear away for me. 

    First thing first, I got the USDA Canning Book from Amazon. In this book, it has all of the tested and safe methods for canning. It does a great job at explaining how to process all the different types of food. 

    For beans, I followed the 12 hour soaking prior to processing. So I put my beans in a giant pot and covered with water before going to bed. The next day, after rinsing the beans thoroughly, I boiled them for 30 mins. The book recommends hot packing your jars; so that means, hot food goes into hot jars and adding hot water to the jars. I washed my jars in the dishwasher the night before, so I warmed them in a pot the next morning to keep them nice and warm for packing. 

    The Nesco can handle 4 quart jars at once or 5 wide mouth (6 regular mouth) pint sized jars. It is kind of like an instant pot, but made for canning and little more robust.
